Ethiopia I want to molecularily identify & characterize microbes, & study the physico-chemical properties of traditionally produced butter from butter shops, open markets & at smallholders level. Because 98% of butter consumed in Ethiopia comes from smallholder production. There are no hygienic standards followed during production, handling, transportation & marketing.
